From experience, I know that deciding what to make for lunch can get boring over time and it’s easy to fall into the trap of making the same things over and over again.
That’s why I’ve put together this list of quick and easy recipes. They’re anything but boring; you’ll find ideas for soups, stews, sandwiches, pasta dishes, and more!
All of the recipes can be made quickly the night before. You can even batch prepare your lunches for the week on the weekend so you don’t have to worry about lunch prep for the week.
Time-saving vegan meal prep is always a good thing, right?
And these recipes aren’t only for taking to work many of them are also kid-friendly making them great for a kid’s packed school lunch box (teenagers too!) and for those who work from home. Lunch is lunch!
And because they’re vegan, they’re all suitable for those who are vegetarian, too, as well as those who need to eat nut-free, dairy-free, and gluten-free.
