Soft and chewy vegan oatmeal cranberry cookies that are quick and easy to make, dairy-free and egg-free! Each bite is filled with bursts of tart cranberry and sweet chocolate chips.

Gather the Ingredients

ground flax seeds – water – oat flour – rolled oats – ground cinnamon – baking soda – salt

soft coconut oil – vanilla extract – coconut sugar – chocolate chips – dried cranberries

– Whisk ground flax seeds and water. Set aside. – In a medium bowl, whisk oat flour, rolled oats, cinnamon, baking soda, and salt. Set aside.

– In a large bowl, mix the flax mixture, soft coconut oil, vanilla extract, and coconut sugar. - Combine wet and dry ingredients and mix until combined.

– Fold in chocolate chips and cranberries. – Scoop equal amounts of the cookie dough onto the baking sheet(s). – Flatten each cookie slightly. - Bake.

– Using a tablespoon or a medium sized cookie scoop, scoop equal amounts onto the cookie sheet(s). Flatten each cookie slightly.

– Bake. – Remove from the oven and allow cookies to sit on the cookies sheet for at least 5 minutes, then remove and place them on a cooling rack.

– Once they've cooled enough, serve and enjoy!
