Easy  Vegan  Lentil Chili

An easy, delicious, and filling vegan vegan lentil chili you can make in your slow cooker or your Instant Pot / pressure cooker. It's the perfect winter meal to warm up with!

Gather the Ingredients

onion – garlic – sweet potatoes – diced tomatoes – red kidney beans – frozen corn – vegetable broth

Gather the Ingredients

dried green lentils – chili powder – cumin – salt and pepper to taste – garnish(es) of your choice (optional)

Slow Cooker Instructions (pressure cooker instructions can be found in the full recipe) - Add all of the ingredients to your slow cooker and mix well.

– Cover and cook on low for 8 hours or on high for 4.5 hours

– When the cooking time has ended, season with salt and pepper to taste.

– Top your lentil chili how you'd like: diced avocados, cilantro, parsley, tortilla chips, etc.

– And serve with any side you like: bread, cornbread, salad, veggies, etc.
