VEGAN DOUBLE CHOCOLATE CHIP COOKIES

Soft on the inside with crispy edges on the outside, these vegan double chocolate chip cookies are rich and chocolaty. They’re the perfect snack and also gluten-free (if you use certified gluten-free oat flour).

Gather the Ingredients

– ground flax seeds – water – oat flour – cocoa powder  – baking powder

Gather the Ingredients

– salt – coconut oil or vegan butter – coconut sugar or brown sugar – vanilla extract – chocolate chips

- Prepare the flax egg, set aside. - Whisk the oat flour, cocoa powder, baking powder, and salt. Set aside. – Whisk the oil, coconut sugar, vanilla extract, and flax egg together.

- Add dry ingredients to wet ingredients and mix until combined. – Stir in chocolate chips until they have combined with the cookie dough.

- Scoop equal amounts of the cookie dough onto the cookie sheet(s).

- Bake for 9 minutes, don't over bake!

- Leave cookies on the cookie sheet to cool for about 2 minutes, then remove and place on a cooling rack.

When they cool they'll be soft on the inside and a little crisp on the outside
