Vegan Gluten-Free Banana Bread

Wondering what to do with overripe bananas? How about making this easy eggless gluten-free vegan banana bread? It's simple to make, and can be customized.

Gather the Ingredients

ground flax seeds – water – gluten free flour blend – baking powder – baking soda – salt – cinnamon

Gather the Ingredients

puréed overripe bananas – sugar – oil OR plain, unsweetened applesauce – vanilla extract – raisins, walnuts, or chocolate chips (optional)

– Prepare flax egg, set aside. – Whisk flour, baking powder, baking soda, salt, and cinnamon, together. Set aside.

– Mix the pumpkin puree, sugar, oil, vanilla, and flax eggs together. – Slowly add the dry mixture to the wet mixture and stir until combined.

– If using, fold in raisins, walnuts, or chocolate chips. – Transfer batter to a loaf pan. – Bake. – Allow banana bread to cool in the pan for 10 minutes.

– Place the bread on a cooling rack. Fully cool before slicing.

– It's soft, moist, and DELICIOUS!
