Easy Vegan Pinwheels

Easy vegan pinwheels filled with a rainbow of fresh veggies and a delicious spread. Serve them as appetizers at your next get-together or potluck or enjoy them  as snacks or lunch.

Gather the Ingredients

– tortillas - chickpeas – green onion – fresh parsley – fresh lemon juice – salt – ground black pepper

Gather the Ingredients

– vegan mayonnaise (see full recipe for how to make without mayo) - red bell pepper – small carrot  – fresh baby spinach

Make the Spread: – Add chickpeas to a large bowl and mash. – Add green onions, parsley, lemon juice, salt, black pepper, and mayonnaise to the bowl and mix well.

Assemble: – Spread half of the chickpea mixture onto a tortilla. – Place the veggies on top of the spread. – Roll and slice. – Repeat with remaining ingredients.

– Serve your vegan pinwheels as appetizers, a party snack, or lunch!

They can be made in advance for serving the next day, simply roll them up (don't slice yet!) wrap tightly, refrigerate and slice just before serving.
