Gather the Ingredients
– ground flax seeds
– water
– oat flour
– rolled oats
– cinnamon
– baking soda
- Prepare flax eggs, set aside.
- Whisk oat flour, rolled oats, cinnamon, baking soda, and salt.
– In a large bowl, mix together flax mixture, coconut oil, vanilla, and sugar. Combine wet and dry ingredients, mix.
- Fold in raisins.
- Scoop equal amounts of the cookie dough onto the cookie sheet(s).
- Flatten each cookie slightly. Leave enough space around each cookie, they will spread a little as they bake.
