Soft, chewy, irresistible vegan oatmeal raisin cookies that are eggless, dairy-free, and gluten-free, too (if you use gluten-free oats and flour)! They’re simple to make and can be ready in under 30-minutes.

Gather the Ingredients

– ground flax seeds – water – oat flour – rolled oats – cinnamon – baking soda

Gather the Ingredients

– salt – soft coconut oil – vanilla extract – coconut sugar – raisins

- Prepare flax eggs, set aside. - Whisk oat flour, rolled oats, cinnamon, baking soda, and salt. – In a large bowl, mix together flax mixture, coconut oil, vanilla, and sugar. Combine wet and dry ingredients, mix.

- Fold in raisins. - Scoop equal amounts of the cookie dough onto the cookie sheet(s). - Flatten each cookie slightly. Leave enough space around each cookie, they will spread a little as they bake.

- Bake for 10 minutes, don't over bake!

- Allow cookies cool for 2 minutes on the cookie sheet, then place them on a cooling rack.

They're soft, delicious, and perfect with a glass of dairy-free milk!
