Easy Vegan Gluten-Free Blondies

The most delicious, chewy vegan blondies that also happen to be gluten-free, eggless, and dairy-free! Make them with chocolate chunks or chocolate chips!

Gather the Ingredients

– ground flax seeds – water – gluten free flour blend – baking powder – salt

Gather the Ingredients

– melted vegan butter – dark brown sugar – vanilla extract – chocolate chunks (or chocolate chips)

– Prepare flax egg, set aside. – Whisk gluten-free flour, baking powder, and salt together. – Add melted butter and dark brown sugar to a medium bowl, and mix well until combined. 

- Add the flax egg and vanilla  and mix again – Combine the wet and dry ingredients, stir until they have fully combined. – Stir in the chocolate chunks.

- Transfer mixture to a prepared baking pan. – Bake 22-23 minutes or until the center is slightly set and an inserted toothpick comes out with moist crumbs.

– Remove from the oven and cool for 2 minutes.  - Remove from the baking pan and place on a cooling rack.

– Cool completely before slicing.
