CREAMY VEGAN GARLIC PASTA

Make this quick, easy & delicious vegan garlic pasta on busy weeknights! It comes together in under 30-minutes and is nut-free and gluten-free (if you use gf pasta).

– fettuccine pasta – olive oil (use water or broth for oil-free) – small yellow onion, diced – pressed or finely minced garlic – soft / silken tofu

Gather the Ingredients

– vegetable broth – nutritional yeast – fresh lemon juice – Italian seasoning – teaspoon salt – black pepper – dry parsley flakes

Gather the Ingredients

– Prepare pasta, drain and set aside. – Heat  olive oil in a large skillet, add onions and cook for  about 2 minutes. Add the garlic.

– Remove skillet from the heat and add onion and garlic mixture, tofu, broth, nutritional yeast, lemon juice,  Italian seasoning, salt, black pepper to a blender. Blend.

– Pour mixture back into the skillet, whisk in  parsley, heat until the sauce is warm and has thickened.   – Add cooked pasta and gently toss until all noodles are coated.

Serve with one or more of the following: - roasted veggies  - salad  - parsley  - red pepper flakes  - and more!
