These decadent, creamy, delicious, vegan key lime cups offer a refreshing taste of summer in any season. They're sweet, tangy, and bursting with fresh lime flavour! Coconut whipped cream adds an extra layer of fluffy decadence.

Instructions
In a food processor, combine the avocados, lime juice, agave, vanilla, salt and coconut oil until smooth. Pour into cups, glasses or small bowls.
Layer with coconut whipped cream, if desired. Chill in the fridge or freezer for at least 1 hour. Garnish with shredded coconut and lime zest, and serve.
Cups will keep well in the fridge for 2 to 3 days.
Notes
I used regular limes (since key limes are not easy to find this time of year!) and I needed seven, so buy a few extra, just in case!
The recipe did not state the kind of coconut oil to use, so I used what I had on hand, extra virgin, which will give the dessert a slight coconut flavour. Coconut lime flavour is delicious, but if you don't want your key lime cups to have a coconut flavour, use refined coconut oil.
The recipe states to mix everything in a food processor. A blender or NutriBullet can also be used. (I used my NutriBullet!)
