Filling vegan strawberry baked oatmeal. that has no eggs, no dairy, no oil, and no refined sugar. It’s a quick make-ahead breakfast to prepare on the weekend.

Gather the Ingredients

ground flax seeds – water – rolled oats (gluten free oats, if needed) – baking powder – salt – ground cinnamon

Gather the Ingredients

– unsweetened non-dairy milk – unsweetened, plain applesauce – pure maple syrup – vanilla extract – chopped strawberries

– Prepare flax egg, set aside. Mix the oats, baking powder, salt and cinnamon. – In another bowl, mix flax egg, milk, applesauce, syrup, and vanilla extract. 

- Pour wet ingredients into dry ingredients and mix well to combine. – Stir in the strawberries.

- Pour mixture into the prepared baking dish and smooth out the top. – Bake for 40-45 minutes (until edges are slightly brown).

– Remove from the place the baking dish on a cooling rack.

Allow the baked oatmeal to cool slightly, serve warm.

– Serve plain or top with strawberry sauce (recipe linked in the post!), maple syrup, dairy-free yogurt, or fresh berries.
