Quick & Easy Vegan Pumpkin Overnight Oats

Creamy, vegan pumpkin overnight oats are a quick, easy and filling no-cook breakfast (or snack) to prepare during weekend meal prep to enjoy during the week.

Gather the Ingredients

milk of choice – pumpkin puree – pure maple syrup – rolled oats – hemp hearts – flax seeds – pumpkin pie spice

– Whisk milk, pumpkin, and maple syrup. Set aside. – Mix oats, hemp hearts, ground flax seeds, and pumpkin pie spice in a mason jar or container with a lid.

– Pour the wet ingredients into the dry ingredients and mix well until there are no dry ingredients left. – Place the jar in the refrigerator for at least 6 hours or up to four days.

Serve plain or with the toppings of your choice.
