– ground flax seeds – water – rolled oats – baking powder – salt – pumpkin pie spice

– pumpkin puree (not pumpkin pie filling) – unsweetened non-dairy milk – pure maple syrup – vanilla extract – raisins

– Prepare flax egg, set aside. – Mix oats, baking powder, salt, and spice together. – Mix the flax egg mixture, pumpkin purée, non-dairy milk, maple syrup, and vanilla extract together.

– Pour wet ingredients into dry ingredients and mix well to combine. – Stir in the raisins, if using.

- Pour mixture into the prepared baking dish and smooth out the top. – Bake for 40 minutes (until edges are slightly brown).

– Remove from the place the baking dish on a cooling rack.

– Allow your pumpkin baked oatmeal to cool slightly before slicing, serve warm.

– Serve plain or top with maple syrup, dairy-free yogurt, or fresh fruit.
