Vegan Lemon Poppy Seed Muffins

Easy vegan lemon poppy seed muffins with a gluten-free option, instructions for both ways are included! An optional lemon glaze makes them more special!

Gather the Ingredients

ground flax seeds – water – gf flour blend or all purpose white wheat flour – baking powder – baking soda – salt – oil

Gather the Ingredients

sugar – plain unsweetened applesauce – fresh lemon juice – lemon zest – vanilla extract – poppy seeds

– Prepare flax egg, set aside. – Whisk dry ingredients together, set aside. - Whisk wet ingredients together, add dry ingredients and stir.

– Fold in poppy seeds and stir, don't over mix.

– Using a spoon or a large scoop, divide batter into the 12 muffin cups. – Bake.

– Let muffins cool in muffin pan for a few minutes and then remove and place them on a cooling rack.

– They're soft, fluffy, and no one will know they're vegan!
