Easy vegan banana baked oatmeal you can make ahead on the weekend for reheating. This recipe is egg-free, dairy-free, oil-free, refined sugar-free, and gluten-free (if you use gluten-free oats).

Gather the Ingredients

– ground flax seeds – water – rolled oats (gluten free oats, if needed) – baking powder – salt – ground cinnamon – ground nutmeg

Gather the Ingredients

– puréed ripe bananas (about 2 medium bananas or 3 small) – pure maple syrup – unsweetened non-dairy milk – vanilla extract – raisins (optional)

– Prepare flax egg, set aside. – Mix the oats, baking powder, salt cinnamon, and nutmeg. – In another bowl, mix the flax egg, banana, maple syrup, non-dairy milk, and vanilla extract together. 

– Pour wet ingredients into dry ingredients and mix well to combine. – Stir in the raisins, if using.

- Pour mixture into the prepared baking dish and smooth out the top. – Bake for 40-45 minutes (until edges are slightly brown).

– Remove from the place the baking dish on a cooling rack.

– Allow your banana baked oatmeal to cool slightly, serve warm.

– Serve plain or top with maple syrup, dairy-free yogurt, or fresh banana slices or berries.
