Quick and easy gluten-free pumpkin cookies packed with chocolate chips. They’re soft on the inside with a bit of crispiness on the outside and filled with warm pumpkin spices.

Gather the Ingredients

gluten free flour  – baking soda – pumpkin pie spice – salt – unsalted butter

Gather the Ingredients

brown sugar – granulated sugar – unsweetened pumpkin puree (not pumpkin pie filling) – vanilla extract – chocolate chips

– Whisk together flour, baking soda, pumpkin pie spice, and salt. Set aside. – Mix butter and sugars until creamy. Add pumpkin and vanilla extract, blend again.

– Gradually add the flour mixture to the butter mixture and mix until everything has combined. – Add chocolate chips and stir into the cookie dough.

– Using a tablespoon or a medium sized cookie scoop, scoop equal amounts onto the cookie sheet(s). Flatten each cookie slightly.

– Bake. – Remove from the oven and allow cookies to sit on the cookies sheet for about 2 minutes, then remove and place them on a cooling rack.

– Once they've cooled enough, serve and enjoy!
