uncooked penne pasta (gluten-free if needed) – olive oil – garlic – tomato paste – crushed tomatoes

vegan heavy cream – nutritional yeast – Italian seasoning – salt – ground black pepper

– Prepare pasta, set aside. - Cook garlic, add tomato pasta and tomatoes. Stir. - Add vegan heavy cream, stir again. Add seasonings and mix well.

– Add pasta to the skillet with the sauce.

– Gently toss until all noodles are coated with the sauce.

– Garnish with chopped fresh parsley or with vegan Parmesan, if desired. Serve immediately.
