Quick and easy vegan gluten-free oatmeal cookies that will bring you back to your childhood! These nostalgic, easy vegan cookies are soft, chewy, and have a hint of cinnamon you'll love.

Gather the Ingredients

– ground flax seeds – water – oat flour – rolled oats – ground cinnamon

Gather the Ingredients

– baking soda – salt – coconut oil – vanilla extract – coconut sugar

- Prepare flax eggs, set aside. - Whisk oat flour, oats, cinnamon, baking soda, and salt, set aside. – In another bowl, add the flax mixture, oil, vanilla, sugar and mix. Combine wet and dry ingredients, mix.

- Scoop equal amounts of the cookie dough onto the cookie sheet(s). - Flatten each cookie slightly. Leave enough space around each cookie, they will spread a little as they bake.

- Bake for 10 minutes, don't over bake!

- Allow cookies cool for 2 minutes on the cookie sheet, then place them on a cooling rack.

They're soft, delicious and perfect with a glass of dairy-free milk!
