Easy vegan gluten-free chocolate chip cookies that are soft and chewy. NO ONE will know these delicious vegan gf cookies are free from eggs, dairy, and gluten!

Gather the Ingredients

– ground flax seeds – water – gluten free flour blend – baking soda – salt

Gather the Ingredients

– vegan butter (softened) – brown sugar, packed – granulated sugar – vanilla extract – chocolate chips

– Prepare flax egg, set aside. Whisk gluten-free flour, baking soda, and salt, set aside. – Beat the butter and sugars. Add flax egg and vanilla  extract.

– Gradually  add the flour mixture to the butter mixture and mix until a soft, sticky dough has formed. – Add chocolate chips and stir until they have combined with the dough.

Scoop the dough and place on the cookie sheet. If  using a tablespoon, roll the dough into balls. – Bake for 10 minutes.

Remove from the oven and let cookies cool on the cookie sheet for 1 minute before transferring them to a cooling  rack.

Cookies will appear puffy and very soft right after they come out of the oven, but that's okay, they will flatten  slightly and firm up as they cool.
