Quick, wholesome, easy vegan buckwheat pancakes that are naturally gluten-free, and SUPER fluffy! They're egg-free, dairy-free, and simple to make. They're perfect for breakfast or brunch.

Gather the Ingredients

– unsweetened non-dairy milk – oil – vanilla extract – pure maple syrup (optional) – buckwheat flour

Gather the Ingredients

– baking powder – baking soda – ground cinnamon – salt

- Whisk milk, oil, vanilla, and maple syrup in a medium-sized bowl. Set aside. - Whisk buckwheat flour, baking powder, baking soda, cinnamon, and salt together in a large bowl.

- Add wet ingredients to the dry ingredients, mix until all ingredients have combined. – Heat pan and lightly coat with a small amount of oil.  - Cook pancakes.

As pancakes finish, place them on a covered oven-safe plate in the oven to keep them warm.

Top with maple syrup, fresh berries, dairy-free whip, fruit sauce, and more!
