CREAMY VEGAN BROCCOLI PASTA

An easy, creamy vegan broccoli pasta dish that you can have ready to serve in 30-minutes! (use  gluten-free pasta to make it gluten-free!)

– olive oil, divided – minced garlic – shallots – broccoli florets – salt – crushed red pepper flakes  – cornstarch

– vegetable broth – unsweetened almond milk – farfalle pasta (gluten-free, if needed) – fresh parsley

Heat olive oil in a large pot over medium-high heat. Add the garlic and shallots. Cook  for 2 to 3 minutes. Add broccoli, salt & red pepper flakes.

Add the cornstarch and olive oil. Cook, stirring continuously for 1  minute. Add the vegetable broth and almond milk. Stir to combine.

– Add  the pasta and bring the mixture to a boil. Cover, then reduce the heat  and simmer for 12 to 15 minutes,  – Serve with parsley and red pepper flakes, if desired.
